I'm not generally a fan of the series with the exception of Nemesis; for some reason I find it quite interesting. Can't answer any of your questions though.
I keep meaning to get Outbreak - I heard the control system has changed (one thing I disliked about the series) and I may as well give it a go, besides, I haven't played a game like it since Onimusha 2 (which I quite enjoyed but it was over too quickly).
Good class architecture is not like a Swiss Army Knife; it should be more like a well balanced throwing knife.

I played Outbreak once. That was pretty fun, but I still didn't like the camera angles and, since it is designed for online play, the equipment menu doesn't pause (you have to use the options menu to do that). The over-the-shoulder camera they began using in RE4 made it a whole lot better, because then you wouldn't end up staring at your person's head while the zombie that is biting off your arm is off-camera (happened to me once or twice in the original RE).
The camera angles are supposed to freak you out...

Great graphics, sounds, algorithms, AI, pathfinding, visual effects, cutscenes, etc., etc. do NOT make a good game.
