Eminem, Jay Z, Dr. Dre, Biggie, 2pac, Doug E. Fresh, Beastie Boys, Outkast, LL Cool J, Run-DMC, NWA.
There are just some of the best rappers of the last twenty years or so. I'm sorry for not mentioning some others. Good rap does exist. Unfortunately, in recent years it has been polluted with mainstream rap about little more than partying and senseless violence. That is not unlike any other genre. Rock suffers from a good deal of crappy performers as well.

If you don't like rap music, that's fine. If you don't like Eminem, that's fine. Your personal taste, however, does not necessarily imply or deny the talent of any artist. Eminem is one of the best rappers out there today; he's got awards from hip hop battles, multi-platinum record sales, good reviews, and a grammy to show for that. For example, Rolling Stone recently ranked every single one of his LPs in the top 500 best albums of all time. I think some rap, the good rap that is, is like poetry in a way.
If you don't appreciate Rap or Country, it's because you haven't listened to enough of it, been in the mood for it, or understood it.... IMHO.
There is some pure garbage being called Rap, but I personally like Eminem and I think he is a lyrical artist. One of the few rappers that I respect more than him is Ludacris. But that may be because of the way Ludacris pronounces things too. It just seems, tho, that he knows how to make words flow together.
Country is also good... but I have to be in the mood for it (which isn't often). There are some really good mellow country songs... and a lot of them are good for breakups.
Again, this is all my opinion.

Rap too often has become the genre of dispair. Why is there so little idealistic rap out there about how guns, gangs, drugs, violence, and misogyny can be put behind us as society progresses? The worst of this genre completely embraces the stereotypical "gangsta" image, treating women as "ho's" who should obey their "pimps," glorifying indifference or even violence towards fellow human beings, and so on.
I admit that Eminem and some of the rappers have quite a bit of musical talent, but they still rap of dispair.
I am a programmer. My first duty is to God, then to nation, then to employer, then to family, then to friends, then to computer, and finally to myself. I code with dignity, honor, and integrity.
