Well the easy way would be to use fdisk. This would hose your current windows installation though, and you would have to start over. If you want to keep your current windows installation intact, then you would need to resize your windows partition to something smaller in order to make room for the other partitions. The only program I know of that does this is Partition Magic, and there isn't a free version of that program (that I know of).

Well if you want a windowing system, I would go for the desktop installation. You can always install whatever server programs you need later on.
