Looking for FOSS projects to read some practical source code..

What I want is to learn from high quality code...but in most of the projects' code ..I'm completely confused by the enormous gui code...(&&many critical portions of the software seem to remain in that portion).
Are there good projects (though it sounds ridiculous ) without much gui code...and somewhat simple to grasp ..(I hope not to look into gnu's or apache source code now !!! ) ..?

OR would it be better to get intimately familiar with GTK, QT ..etc etc...before bothering to try this...?

If you dance barefoot on the broken glass of undefined behaviour, you've got to expect the occasional cut.
If at first you don't succeed, try writing your phone number on the exam paper.
