    Personally I have coded in lots of languages on lots of platforms and coding for Linux remains the most "fun" for me. "Challenging but fun" would have to be custom OS on custom HW trying to emulate POSIX. Painful these days would be Perl or Win32...did a Win32 contract recently and at the end of 30 days wanted to pound a nail into my head to stop the pain...
