Why might two individuals sending mail between the same two points find that the path the message traveled for each message did not match?

Because it HOPS - one mail server will connect to another but that mail server has a list of mail servers it can connect to pass along the message. It may be different each time based on the work load the mail server is under, ie it will try to load balance and send the task to another server.
