What is the easiest to pick up and use free dos compiler that won't take me a year to remember all the commands and line switches?

Download Turbo C++ from borland's website...

It is the best, and it has been around for many years. MUCH better than DJGPP or anything else!

A lot of people are saying DJGPP (mainly because that is correct), but what does it actually stand for? Is it even an acronym?

The initials of the author of DJGPP are DJ. It used to be DJGCC, when he/she made an own port of GCC. Later when C++ was added, it was called DJGPP.

And yes, DJGPP, or GCC, is one of the best compilers for whatever platform.

Ah. I see how it is. -oscuro- - you should make this into a poll in General Discussions <- see what people there say (and you'd get a lot more answers - it's like the most popular forum).
