Seriously, if you really want a challenge but still want to do a simple game, try doing a Yatzhee clone. Not really hard but still requires some work.

Yathzee is a game where you have 5 dice. You roll the dice to try to get certain patterns, ie:
3 of a kind, 4 of a kind, full house, straight, ones, twos, threes, etc.

You get the opportunity to roll 2 ( I think it's 2 ) more times per turn to add to your score. Once you fill a block ( say for instance you roll a straight ) you can not add to that block again during the game.

You take turns until all of the blocks are filled ( all that can be ). The player with the most points wins.

Yathzee is a good game for beginners who have already made an "intro" game ( ie: Tic Tac Toe, etc. ) because you have to calculate random numbers, you have to test for matches to predefined patterns, etc.
